soul food

Soul food!
I am not talking about some plain ass southern style green beans, I mean some deep down cook what you got cause you are broke and thats all you have left in the root celler gourmet.
I am currently gorging myself on some fried sweet potatos and gravy.
anybody else have any favorites?

Greens and vinegar - kale, mustard, collared, what have you. But especially kale.

when my brokeness gets to that point, i normally do the
1)ramen+egg+frozen veggies
or the much better/freasher but more time consuming
2) boil all the veggies you gots (turnip/parsnip/squashes/corn), drain, toss in [piece of chopped up meat with packet gravy or can of creamed corn] and place in pan with [pie crust (flour, margerine, salt) or instant corn muffin mix] and bake. voile... a veggie (meat) pie
but us yanks have little soul, so i doubt it counts to what you're looking for.... we tend toward the cassaroles...

There's always enough money for a big pot of beans with sasuage pieces. Add some corn bread and you set!

Once again, Knoxville needs a friggin' Popeye's Chicken.
I would eat there at least twice a week.
